  3. Roll out the dough between two pieces of parchment paper. Roll it out to the desired thickness of your animal crackers. You want them to be a bit thicker, so be careful not to roll your dough too thin.
  4. Use mini animal shaped cookie cutters to cut shapes out of the dough, and transfer the cut shapes to a parchment lined baking sheet.
  5. Bake the cookies at 325 degrees for 8-10 minutes or until browned and cooked through. If you are using thinner cookies, you may need to set a lower bake time, so keep an eye on them.
  6. Place the white chocolate chips and coconut oil in a microwave safe bowl, and heat at 30 second intervals until completely melted and smooth.
  7. Pour the melted chocolate into several different small bowls, and place a few drops of food coloring in each one.
  8. Mix the food coloring thoroughly, and then dip the baked crackers into the melted chocolate.
