Giving gifts during the holidays is said to stem from the gifts given to baby Jesus by the three wise men. The tradition is in honor of showing a heart of giving and humility as well as sacrifice. In other words, it’s all about caring about others and not ourselves. It’s unknown when candy began being given as a present during the holidays. However, it’s a very popular gift and is often homemade by the giver.

I am one of those people that love giving out treats for the holidays. They always say that food is one of those gifts you can never go wrong with. As long as you know the person well enough in order to give them something they will like with any diet restrictions or allergies in mind. It is never fun to get a gift you cannot use. This Almond Joy Bark has been a huge success in recent years, which is why I just had to share it with you.

How Do You Make Almond Joy Bark?

You cannot believe how easy this candy recipe is! When I first made it, I thought maybe I had skipped a step or something. This recipe simply involves lining a cookie sheet with parchment paper before pouring the ingredients together on top of it, and letting them cool. Once your cookie sheet is lined with parchment paper, place your chocolate chips and coconut oil in a bowl. Place in the microwave in 30-second increments, stirring in between until the chocolate is fully melted. Pour it evenly across the cookie sheet and immediately sprinkle shredded coconut and almond pieces across the top. Let it cool in the fridge for an hour before breaking it into random pieces. Seriously, that is all it takes.

Tips for Making Almond Joy Bark

● The coconut oil gives a nice coconut aroma to the bark. In case you do not have any, add a tablespoon of vegetable oil or shortening. This will prevent any seizing of the chocolate. Also add ½ a teaspoon of coconut extract to the melted chocolate to get that alluring coconut aroma.
● If you are running short on time, the chocolate may sit up quicker than an hour. Giving it an hour is a precaution. You can also try the freezer.
● This recipe can be stored in the freezer or fridge in an airtight container. If storing pieces on top of each other, it may be beneficial to separate them with wix or parchment paper.
● Do not overheat the chocolate. Use short bursts in the microwave and stir in between to smooth out any lumps.

Why is My Chocolate Bark Soft?

Sometimes if chocolate is overcooked or undercooked, it will not react the way you need it to in order to make a bark. This is why it is important to not add any extra ingredients to the chocolate and melt it in 30-second or less increments. You want your chocolate to be smooth and creamy when you pour it out to form the bark. If it is not, something is wrong and it is most likely undercooked or overcooked. If you have added ingredients to the chocolate, one of them may be reacting with the chocolate, causing it to change consistency. I know this can happen with certain gel dyes.

What is Chocolate Bark Made of?

Chocolate bark is literally just a large sheet of chocolate. Of course, there can be a number of ingredients added to it, depending on the type of chocolate bark it is. However, the base of all chocolate bark is just pure chocolate, melted down to form a large sheet. Common toppings are nuts, candies, coconut, other chocolate chips, sprinkles, etc.

Can You Freeze Chocolate Bark?

Depending on your toppings, most chocolate barks can be frozen for up to a month, in an airtight container, but the chocolate may change color. The best way to store it is to separate each layer with wax paper so that the portions desired, are easily removed without making a mess of the rest of the bark. Certain toppings may keep the bark from being frozen though. For example, sometimes cereal and cracker pieces are used on top of the bark and these ingredients would not hold up well after being frozen. They would turn mushy and stale which is not very appetizing.

Is Almond Bark a Chocolate?

Almond bark is not really chocolate, although it tastes a lot like white chocolate. It is made with fats rather than cocoa butter like chocolate is. It melts similar to chocolate and is used in candies in the same way chocolate would be. You usually buy it in the same section where baking chocolate is purchased in the store. It is only sold for baking purposes, though, and is not sold in candy ailes like chocolate commonly is.

12 oz Bittersweet Chocolate Chips
1 TBSP Coconut Oil
½ cup Shredded Coconut Flakes
½ cup Sliced Almonds

Almond Joy Bark Recipe Directions:

1. Line a 9″ x 13″ baking tray with parchment paper.

2. Combine 12 ounces of bittersweet chocolate chips and one tablespoon of coconut oil in a large microwave safe bowl and microwave for 30 seconds. Give it a good mix and put it back for another 20 seconds. Mix well till all the chocolate chips are melted and you have a smooth and glossy melted chocolate.

3. Pour the melted chocolate onto the prepared parchment lined pan. Spread it out in a thin layer.

4. Top the melted chocolate bark with ½ cup of shredded coconut and ½ cup of sliced almonds.

5. Chill in the fridge for 1 hour.

6. Break it into small pieces and serve. Or put them into cute baggies and give them as edible gifts.
