Here in Canada Honey and Garlic Chicken wings are a big thing in the bars and restaurants, but chicken wings can be pretty tough to remove the skin from and once you do, there isn't actually much left on them to eat. So I like to opt for drumsticks, the skin is really easy to remove, and because the bone is intact, the chicken stays nice and moist with lovely flavour.

If you struggle to remove the skin from drumsticks, a little tip is to use some kitchen roll to hold the chicken, and then using another piece, grab the skin and in a quick pull, it should come off nice and easy.

This Honey and Garlic Chicken makes a great family meal, that kids will love because of that sweet and sticky flavour. If you or any other family members are not keen on chicken drumsticks, you can use chicken breast or thigh meat instead.

In the summer I like to make a big tray of this Honey and Garlic Chicken if we have a day out planned, they are perfect in a picnic basket, with salad, fruit and lots of other healthy nibbles. They also are amazing cooked on the barbecue.

HOW CAN I ADD A ⅓ VEGETABLES TOTHIS HONEY AND GARLIC CHICKEN?

A nice mixed salad is a perfectside for this Honey and Garlic Chicken, I like baby greens, with tomatoes, beets, cucumber, shredded carrot and onion. This coleslaw goes really well too. Really though these would pair well with any vegetables of your choice.

Honey and Garlic Chicken Drumsticks

Just a couple of simple ingredients come together to make this delicious Honey and Garlic Chicken

Ingredients

  • 8 Chicken Drumsticks (skin removed)
  • 2 tablespoons of Soy Sauce (or tamari or coconut aminos)
  • 2 tablespoons of water
  • 2 tablespoons of honey
  • 2 cloves of garlic (crushed)
  • ¼ teaspoon of garlic powder
  • freshly chopped coriander to serve

Instructions

  1. In a bowl, mix together the soy sauce, honey, garlic, water and garlic powder.
  2. Add the chicken drumsticks and mix to evenly coat. Marinade for approx 4 hours if possible.
  3. After marinating, Preheat oven to 220c or 425f (gas mark 7)
  4. Transfer chicken and marinade to an oven proof dish or a baking tray line with foil.
  5. Bake in the oven for approx 30-35 mins until chicken is cooked through. Basting with the sauce half way through cooking time.
  6. Finish off under the grill for a couple of mins, to give a lovely charred colour to the top.
  7. Top with freshly chopped coriander.
  8. Serve with your choice of sides.
