Easy Breakfast for a Crowd

Breakfast Casseroles are one of the most underrated breakfast dishes! They’re SO easy to throw together and can feed a large crowd, which makes them perfect for family get-togethers, holiday weekends, brunches, or baby/bridal showers.

There are so many kinds of easy Breakfast Casserole Recipes. Most of them contain eggs, and either bread or potatoes with different types of breakfast meats like ham, bacon, or sausage.

Cheesy Breakfast Pie and Ham and Breakfast Strata are two of our favorite savory casseroles. Some Breakfast Casseroles are sweet, like our French Toast Bake, or Cinnamon Roll French Toast Bake.

We have several tried and true Breakfast Casserole Recipes to share with you. But before we do, we’ve gathered some tips for making your own.

Breakfast Casserole Tips

Make ahead of time. Not only are casseroles super easy to throw together, but most can also be made ahead of time. Simply combine the ingredients the night before, cover, and refrigerate until morning.

You can also prepare the different ingredients the night before so that it only takes a few minutes to assemble the casserole and bake it.

Runny casserole. If your casserole is almost done baking and is still runny:

  1. Mix 1 tablespoon of cornstarch and 1 tablespoon of cold water in a small bowl.
  2. Remove the casserole from the oven and stir the cornstarch mixture into the casserole. The cornstarch slurry will help thicken the casserole while it finishes baking.

Casserole additions

We love each Breakfast Casserole as they are, however, you can easily customize them to your preference. Here are a few flavor additions that work well with most savory casseroles:

  • bacon bits, ham cubes, sausage crumbles
  • diced bell peppers
  • broccoli florets
  • green onions
  • spinach
  • sliced mushrooms
  • cheese: pepper jack cheese, cheddar cheese, mozzarella cheese, colby jack cheese, swiss cheese
  • Buttermilk Syrup

What to serve with Breakfast Bakes

If I am making a savory breakfast casserole I like to balance the meal with a sweet side, like a Fruit Salad or Yogurt Parfait.

If the breakfast bake is sweet, then I’ll often serve a more savory side like Hash Browns or Avocado Eggs.

Storing info

The individual recipes have more storage information specific to that recipe, but here are a few general tips.

STORE. In general, most casseroles and bakes can be covered and stored overnight in the fridge before baking them.

FREEZE. To store it in the freezer, first bake, then let it cool. Wrap tightly in plastic wrap and again with foil. Thaw before reheating.

Leftovers with eggs or meats can be covered and refrigerated for 2-3 days. If it is a sweeter bake, it does not typically need to be refrigerated. Both the leftovers for savory and sweet casseroles can be covered and frozen for up to 2 months.
